POSITION TITLE: Sous Chef

COMPENSATION: $27.00-$30.00
LOCATION: Youth Transition Campus (YTC) San Diego, CA

Position Summary:
The Sous Chef is responsible for the high-quality production, preparation, and serving meals for the custodial youth at the Youth Transition Campus (YTC).
Essential Functions & Responsibilities:
- Manages and monitors compliance with approved food preparation and service procedures, including use of standardized recipes, portion control, presentation and quality of food and HACCP.
- Set up workstations with necessary ingredients and cooking equipment.
- Prepare sauces, sides, and entrées in accordance with the established production menu and proper food safety standards.
- Correctly prepare all food served following standard recipes and special diet orders.
- Prepare food served using established production procedures and systems.
- Cook food in various kitchen equipment (tilt skillet, ovens, smokers, grill, flat top, etc.).
- Prepare food in adherence with the established temperature control system.
- Complies with established sanitation standards, personal hygiene and health standards.
- Observes proper food preparation, storage, and handling techniques.
- Apportions food for serving.
- Completes food temperature checks and proper batching to ensure safe and efficient cooling.
- Adhere to all outlined established safety policies and procedures.
- Work alongside apprentices as journeyman and provide guidance, instruction, and feedback.
- Assists with stocking and inventory ensuring that necessary ingredients are available and as fresh as possible while also minimizing spoilage and waste.
- Maintains and inspects kitchen equipment and utensils, recommending repairs of replacements as needed.
- Maintains necessary logs and reports in accordance with meal contract requirements.
- Assists the Chef in resolving customer complaints and requests in accordance with Kitchens for Goods service standards.
- Works alongside Chef and Cooks in the daily operation, production, and packaging of meals.
- May be called upon to assist with the loading and unloading of delivery vans.
- Completes preparation assignments for next day’s menus
- Monitors, assesses, utilizes food donations and reduced-price food purchases effectively.
- Assist in monthly inventory management and reporting.
- Leads production of meals and kitchen operations in the absence of Chef.
- Assists with training, mentoring, and daily instruction to our apprentices and kitchen staff.

Education and Work Experience:
- Minimum high graduate or equivalent
- 2+ years of experience as a Line Cook or Production Cook
- Graduated Kitchens for Good Apprentice (Certified by the Department of Apprenticeship Standards) – highly desired
- Working knowledge of various computer software programs (MS Office, etc.)
- Food handlers (or willing to obtain one upon hire which will be scheduled and paid for by the organization)
Work Environment:
This job operates in a kitchen environment, housed with equipment such as an oven, stove, dishwasher, slicer, coffee machine, steamer, mixer and chef’s knives. The employee is frequently exposed to heat, colder than normal temperatures, steam, fire and noise.
The kitchen is located at the Youth Transitional Center (detention center for youth) in 2801 Meadow Lark Drive San Diego, 92123 near our Door of Hope Campus. Employees will interact with Kitchens for Good Staff and the staff of the detention center.
Physical Demands:
The physical demands described are representative of those that must be met by an employee to successfully perform the essential functions of this job.
The employee is required to stand for an extended period of time, sit, reach, lift, bend, kneel, stoop, climb, push, and pull items weighing 50 pounds or less. The position requires manual dexterity; auditory and visual skills, and the ability to follow written and oral instructions and procedures.
Position Type/Expected Hours of Work
This is a full-time position non-exempt position scheduled at 40 hours a week. Includes weekend and evening shifts. Am shifts and PM shifts available and may vary depending on the needs of the organization.
Travel:
Employee may be expected to travel to additional KFG locations to provide coverage during staffing shortages.
Background checks:
Must undergo Criminal background clearance through the Probation (backgrounds), State of California Department of Justice (DOJ) and Federal Bureau of Investigation (FBI). Drug screen and Tuberculosis Testing.
