As a Prep Cook/Dishwasher, you will be held to a high standard for: food preparation according to recipe standards with quality and consistency, cleaning and proper sanitation of all dishware,  and maintaining a clean, sanitary, well stocked, and safe kitchen work environment. You'll work closely with the Kitchen Manager and other members of the kitchen team to uphold these standards in delivering an amazing guest experience, including: 

The Work

Food Preparation
  • Maintaining clear communication with Kitchen + Service team members to food prep multiple food orders simultaneously
  • Ensuring the preparation station and the kitchen is set up and stocked
  • Preparing simple components of each dish on the menu by chopping vegetables, cutting meat, and preparing sauces
  • Making sure food preparation and storage areas meet health and safety standards
  • Supporting the daily completion of food safety checklists and participate in maintaining food safety compliance
  • Cooking menu items with the support of the kitchen employees
  • Assisting with food preparation for events/party functions
  • Assembling and cooking our menu items and preparing the perfect dish
  • Adhering to recipes to ensure consistent food quality and presentation
  • Assists the other kitchen staff members with pressure point relief during the shift as needed
Dishwashing
  • Cleaning and sanitizing all dishes, flatware, glassware, pots, pans, and cooking utensils by using a dishwasher or three part sink, by hand
  • Carefully inspecting and sorting all dishes and utensils to ensure none are lost, disposed of, or damaged
  • Using all chemicals properly and in the correct quantities per guidelines
  • Ensuring the cleanliness of all work areas- floors, walls, drains and equipment in dish areas
  • Maintaining a clean and sanitary dish area work station
Performing open/close/ongoing duties and upholding sanitation standards
  • Ensuring proper sanitation of kitchen spaces, equipment, and tools, including but not limited to, mopping, seat/table-cleaning, cleaning and sanitizing of kitchen equipment and tools
  • Follow procedures to ensure that the kitchen environment is clean, organized, safe, and in good repair for  co-workers and guests
  • Perform general maintenance and cleanliness of kitchen equipment, walk-in, and dry storage
  • Cleaning and maintenance of all kitchen mats, floors, walls and drains
  • Empties all trash in the kitchen and cleans and maintains trash cans
Preparation and Stocking
  • Perform daily food service prep and closure 
  • Perform ongoing kitchen stocking and maintenance duties, accurately creating the inventory sheet
  • Maintain stock of food items up to par levels at all times
  • Assisting in loading/unloading of food or supply trucks
  • Transfers supplies or equipment between storage and work areas
Other
  • Make recommendations to keep high standards of 1UP’s  kitchen and food program
  • Positively represent the 1UP brand in our community and local market
  • Working with management to make recommendations to keep high standards of 1UP’s food program
  • Assist others and perform additional duties as directed
The Requirements
  • Team player a must; 1-2 years kitchen exp in a high-volume, fast paced restaurant/bar
  • Positive attitude, patience, cool-headedness, and passion for making people smile

  • Respect for quality food and beverage, and appreciation for the technique associated with production.
  • Ability to manage controllable line items, analyze and provide input on cost saving measures, proper execution, and efficient output
  • High level listening and communication skills supported by strong organizational and multitasking skills
  • Ability to work quickly and meet deadlines with minimal supervision in noisy, fast paced environment with frequent distractions 
  • Maintain regular personal attendance for all scheduled shifts
  • Works in a friendly, honest, and diligent manner with fellow team members, supervisors, and managers
  • Seeks knowledge from multiple sources and learns from past experiences for future development and growth
  • Maintains uniform standards, including required uniforms and/or usage of Personal Protective Equipment (PPE).
  • Physical demands* include but are not limited to: 
    • Must be able to stand and exert fast-paced mobility for several hours at a time.
    • Must have a good sense of balance, be able to bend, reach, mop, sweep,  and kneel and have the ability to lift bus tubs, glass racks and trays frequently weighing up to 25-50 pounds
    • Work conditions with both hot and cold temperatures
  • Must be Age 21 or older 
  • Work days, nights and/or weekends as required.
  • Ability to obtain any required food service licenses or certifications
