Responsibilities:
- Managing day-to-day pastry operations and pastry team.
- Execute daily food service, quality, technique, portion, presentation and cost control.
- Examine the freshness of ingredients and participate in food tastings.
- Standardize production recipes to ensure consistent quality.
- Ensure there is no shortages or discrepancies in products or ingredients.
- Manage, motivate, and train pastry team and enforce compliance and issue corrective action as needed.
- Ensure that appropriate maintenance and safety standards are followed.
- Implement and maintain culinary excellence standards.
- Support management with catering proposals, menu pricing and menu Innovation.
Qualifications:
- Minimum 5 years of experience in high volume food service or food manufacturing production with experience/exposure to leadership roles
- Hazard Analysis Critical Control Point (HACCP) and general food safety standards knowledge is required.
- Experience in high-end food knowledge is a plus.
- Proficient culinary knowledge of terms, procedures, and practices.
- Flexibility to perform assigned tasks independently or as part of a work team.
- Self-motivation, strong leadership skills to manage a team.
- Excellent written and verbal communications skills, and ability to interact and work well within a diverse group.
