Position Purpose Responsible for assisting in the preparations of food following standardized recipes and supervisions of staff; Maintenance of superior quality and standards of food preparation and presentation, development of apprentices, and contributing to the profitability of the kitchen brigade Essential Job Functions Functions Responsible in preparation of food in accordance with recipes and cooking standards Responsible in set up and organization of assigned work area Maintain cleanliness of all areas behind the line, including, but not limited to shelves, work tables, and sink Maintain consistent high quality of food items in accordance with guest requests and standards of the Executive Chef Prepare and maintain culinary products in place for shift Maintain open lines of communication with Restaurant Manager in order to maintain high quality levels of food items Maintain safety and cleanliness of work area Decrease risk of food spoilage through activities including, but not limited to proper rotation of food stock, proper storage areas when through with use Inspect all equipment, including, but not limited to refrigerators and freezers. Report any problems to appropriate personnel. Follow up to ensure correct of problem Ensure HACCP standards are implemented and follow the appropriate hygiene standards as per Municipality requirements at all times Ensure food safety procedures are followed and up to date Customer Service Interact in courteous and professional manner with guests and hotel staff with whom employee comes into contact Respond in a courteous, professional and rapid manner in order to resolve all guest and associate difficulties Other Assist with related duties and special projects as requested Attending training sessions set out by the Westin Resort to ensure continued personal development Supervisory Responsibility: Supervise and direct cooks and make adjustments as needed to maintain service standards Required Knowledge and Skills Must have thorough knowledge of basic cooking methods Must have the ability to apply creativity and originality to production of food items and presentation in accordance with needs Able to supervise and train newly hired staff Interpret and comply with a variety of instructions furnished in written, oral, diagrammatic or schedule form Continually researching and developing new ideas/concepts to ensure that the Westin Hotels and Resorts uphold their competitive edge in the marketplace Ability to apply creativity and originality to production of food items and presentation in accordance with needs Ability to focus and maintain attention to the performance of tasks despite periods of interruptions Ability to work and complete assignments on time despite frequent stressful, emergency, critical or unusual interruptions Ability to maintain good relations with staff Ability to memorize, recollect, and quickly retrieve dates, names, times, and other data Ability to converse calmly with irate superiors and subordinates in sometimes intense emotional situations Must be able to convey positive image of self and hotel Knowledge and ability to maintain state and federal health code standards Thorough knowledge of Traditional French and American cooking methods Ability to perform tedious detail work including, but not limited to garnishes and presentation work Must be able to understand and comply with safety precautions in use of chemicals Qualifications Required Education and Experience High School or equivalent education required Internship and minimum one year practical work experience in a first class hotel or restaurant kitchen required Special Position Requirements All employees must maintain a neat, clean, and well-groomed appearance Must be able to obtain and maintain a health certificate during employment Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel. In addition, attendance at all scheduled training sessions and meetings are required.
