Title: Executive Chef Program: City Beets Kitchen - Third Street Salary: $85,000 Program Description City Beet Kitchens is a full-service catering company that is a social purpose enterprise within Project Renewal. We were established in 1995 as “Comfort Foods” and rebranded in 2015 to “City Beet Kitchens.” We cater to institutional organizations with 4-cycle seasonal menus and special event meal service. The total number of meals prepared on a daily basis throughout our kitchens is approximately 5,000. Overall Responsibilities The Executive Chef is responsible for overseeing our Institutional kitchens and their staff. Executive Chef duties include hiring and training staff to cook their dishes with a focus on healthy, elevated meals. The position also requires extensive experience in pricing out menus, and budgeting/forecasting usage projections. Driving a lower food and supply cost is a critical component of this position. This is a high-profile role and monthly meetings with Project Renewal leadership are expected. Essential Duties and Responsibilities The essential duties of the Executive Chef include, but are not limited to the following activities: Both leading and being a part of a team. Foster climate of cooperation and respect. Anticipating the customers’ needs while being flexible and responsive. Working with Executive Director of CBK and Director of Operations and team leadership to continue developing the highest quality of culinary experience for the Institutional division. With staff retention as a goal, overseeing the scheduling and management of CBK employees. Ability to work with and mentor a wide variety of people and backgrounds. Monitoring pricing with vendors and overseeing ordering food & supplies, calculating food & supply costs. Knowledge of Coupa purchasing system a plus. Creativity and passion for great food: curating menus; working with Nutritionist; testing recipes. Patience, teaching skills and mentor-mentality. Qualifications: A minimum of 8-10 years culinary experience in management positions (Executive or Sous Chef). Perform administrative tasks, including weekly and monthly financial reporting. Excellent organization & communication (written and oral) skills. High volume restaurant or catering experience. Thorough understanding of NYC DOHMH rules and regulations & NYC Food Standards. Computer literacy. Proficient in Microsoft Outlook, Word, and Excel. All newly hired Project Renewal staff must provide verification of being fully vaccinated against Covid-19.
