Forbes Hospitality is looking for an enthusiastic Sous Chef to add to our current team. All applicants must be able to take direction well, work well with others, have strong kitchen management skills, and have formal training in the culinary arts profession. All applicants must pass a background check. Weekends and evenings are a must for this position, with a typical schedule ranging from Wednesday to Sunday, but with flexibility based on our events schedule.

Previous experience in a high-volume banquet setting is preferred.

Responsibilities

Reports to General Manager and Executive Chef to solve problems that arise and taking control of any issues in the kitchen
Oversee and manage all back of house departments – culinary, dishwashers, utility
Properly training and motivating new and existing employees
Assist Executive Chef with the supervision of the culinary team
Able to take control of the kitchen in the absence of the Executive Chef to ensure smooth running of the department
Collaborate with General Manager and Executive Chef to ensure that food is of top quality and prepared properly as per company standards
Ensures profitability of the Kitchen, in regard to inventory control, portion sizes, etc.
Must be a problem solver and able to perform with little or no supervision
Must have experience in butchering, cleaning fish, and have good knife skills
Maintain all kitchen equipment in good working order, schedule repairs as needed
Supervises and maintains standards of cleanliness in the kitchen

Requirements

Formal culinary training or degree or diploma in Culinary Arts
Minimum of 5 years’ experience in a fine dining restaurant or banquet facility
Minimum of 2 years of supervisory experience
Ability to communicate clearly with the back of house and front of house teams, guests, and managers
Must have experience in menu development, recipe development, and costing of recipes. A strong mathematical background is a plus
Experience with inventory and cost control
Positive attitude and excellent communication skills
Ability to work as part of a team
Friendly demeanor with a passion for hospitality
Must be a leader who handles pressure well and is creative with a passion for food
