Job Summary:

We are seeking a talented and creative Sous Chef to join our brewery’s scratch kitchen at Ferndale Project. As a Sous Chef, you will play a crucial role in the culinary operations assisting the Head Chef in leading daily kitchen operations, including food preparation, cooking, and mentoring the team in daily operations. Your primary focus will be on producing upscale bar food with delicious vegan options and an emphasis on quality, flavor, and innovation while also contributing to the creation of exciting new dishes that cater to our diverse customer base.

Performance Expectations- Essential functions:

Oversee the day-to-day operations of the kitchen, including food preparation, cooking, and plating, to ensure consistent quality and presentation.
Leads the team and assumes all procedural responsibility when Head Chef is not present
Assist in supervising and training kitchen staff, providing guidance on culinary techniques, food handling, safety standards, and sanitation practices.
Work closely with the Head Chef to manage inventory, control costs, and minimize waste through efficient production and portioning.
Collaborate with the Head Chef to develop and execute a seasonal menu.
Lead by example, ensuring a clean and organized kitchen environment by implementing and enforcing proper cleaning schedules and hygiene practices.
Stay up-to-date with culinary trends, techniques, and ingredient availability to contribute fresh and innovative ideas to the menu.
Collaborate with the brewing team to develop food and beer pairings that enhance the overall dining experience.
Conduct regular quality control checks to ensure that all dishes meet or exceed the brewery's high standards.
Assist in creating and implementing new recipes and menu items, particularly in the vegan category, ensuring they are balanced, flavorful, and visually appealing.
Foster a positive and collaborative work environment, promoting open communication and teamwork among kitchen staff.
Collaborate with the front-of-house staff to ensure smooth and efficient service, maintaining open communication and addressing any concerns or special requests promptly.

Requirements

Required Skills/Abilities:

Proven experience as a Sous Chef or a similar role in a scratch kitchen environment.
Extensive knowledge of food preparation techniques, cooking methods, and flavor profiles, with a passion for creating exceptional dishes.
Strong leadership skills, with the ability to motivate and train kitchen staff effectively.
Excellent organizational and time management skills to ensure smooth kitchen operations and timely delivery of food.
Knowledge of food safety and sanitation regulations and the ability to enforce strict hygiene practices.
Flexibility and adaptability to work in a fast-paced environment, handling multiple tasks and priorities simultaneously.
Creativity and innovation to contribute fresh ideas and concepts to the menu.
Ability to communicate effectively and collaborate with team members from different departments.

Physical Requirements:

Prolonged periods of standing and walking
Must be able to lift up to 50 pounds occasionally
Ability to use hands and fingers in grasping, pinching, and chopping using kitchen tools
