Position Overview: As a Traveling Executive Chef at Culinesse, LLC, you will play a critical role in supporting and or overseeing multifaceted operations including healthcare, fine dining , quick service , high volume and large scale banquets and catering. You will be responsible for planning, ordering, invintorry, preparing, cooking, and presenting a wide range of food items for different meal periods including breakfast, lunch, dinner, and special events.


Culinesse is based in Bethlehem, PA, we’re proud to serve and support clients throughout Philadelphia, PA; Pittsburgh, PA; Richmond, VA; Roanoke, VA; Charlotte, NC; Columbia, SC; and the surrounding areas. 


Key Responsibilities:

  • Maintain rigorous sanitation standards by ensuring cleanliness of work stations and equipment, adhering to all safety and regulatory requirements.
  • Coordinate seamlessly with related food and beverage departments to ensure smooth kitchen operations.
  • Manage food costs effectively through meticulous record-keeping of ingredients and supplies.
  • Innovate and implement new menu items, ensuring successful roll-out.
  • Provide direct supervision and mentorship to kitchen staff, enhancing their skills and fostering a team-oriented environment.
  • Oversee daily kitchen activities and ensure consistent preparation, plating, and presentation standards.
  • Train new employees, prioritize tasks, and conduct performance evaluations.
  • Recommend and apply changes to procedures or production to optimize operations.
  • Engage in hands-on food preparation, potentially serving customers directly.
  • Utilize a variety of kitchen tools and equipment, maintaining advanced knife skills and employing both classical and contemporary culinary techniques.
  • Monitor inventory levels and manage supply requisitions to support production needs.

Requirements

Ability to travel;

A high school diploma or equivalent;

Four (4) or more years of related work experience;

Must comply with any dress code requirements;

Must be able to work nights, weekends and some holidays.
